For this production, we chose a different terroir; we moved to the La Ciénega region to experiment with another profile.
Rancho Corralillos is located about 5 km in a straight line from the north shore of Lake Chapala, and its average altitude is 1,550 meters above sea level, making it the lowest altitude field ever used for Tequila Ocho.
The terrain is flat with few small stones, deep clay-type soil of medium-high fertility. Corn is grown almost exclusively on this land, with few agave plantations; the harvested field is surrounded by cornfields and pastures, therefore it is fully sunny with only a few low-lying bushes and trees to the east.
This field yielded approximately 1,900 metric tons of fully mature agave, with the harvested agave heads weighing an average of 30 kg each and containing approximately 30% of sugar.
On the nose: Very fresh, ripe pineapple, lemon juice, spearmint, thyme, dried chilies, sweetish undertone of cooked agave.
On the palate: Green tea, orange peel, light black pepper. Notes of honey, cooked agave. Very silky and smooth on the palate, aromatic and sweet.
